Rita’s Marinated Grilled Chicken

If you haven’t already fired up the grill this spring, this healthy recipe will inspire you to do just that (or it can be made on the stove).  It’s a great way to use fresh oregano which is abundant in the market and in many gardens this time of year.

1 generous tablespoon chopped fresh oregano
1 tablespoon olive oil or bit more
1 teaspoon favorite chili powder
1 teaspoon cumin
1/2 teaspoon salt
1 tablespoon garlic, minced
4 chicken breasts, boned & skinned, 6 oz ea.
